Dietary fibers are also carbohydrates, but they are practically not absorbed by the body, they pass through the entire gastrointestinal tract practically unchanged and contribute to the normalization of bowel movements, which was probably somewhat complicated by the previous days of protein.
It is very important that the vegetables are fresh (i. e. raw). This is the only way they can get the best out of them. Expose a pepper and it transforms from a high-fiber product to a high-carbohydrate vegetable. Experiments are therefore not necessary. We only eat what is indicated
